Aloo Palak(Spinach and potato curry)

I had a packet of spinach in my pantry and i was wondering like what to do with it. Then i remember my mother adding thinly sliced potatoes in the spinach while she stir fried the freshly chopped potatoes. It always tasted wonderful. But what i had was minced frozen log of spinach . Anyways i tried my mum's recipe and i came out with wonderful result. Then it became necessary to post this as it was a recipe worth to be noted.
Aloo palak(spinach and potato curry)


Serves- 4 people
Preparation time- 5 minutes
Cooking time- 15 minutes
Total time- 20 minutes
Level of difficulty- easy

Ingredients:

  • Spinach minced/ Fresh spinach - 250 g
  • Potato- 4 , sliced
  • Onion- 1, sliced
  • Green Chilly- 2
  • Tomato- 1, chopped
  • Garlic- 2, chopped
  • Paanch phoren/ Cumin seed- 1 Tsp
  • Salt as per taste
  •  Pepper cons, freshly crushed or Pepper powder- 1 tsp
  • Oil for cooking.
Preparation:
  • If you have fresh spinach, place them in the boiling water and boil for 5 minutes. Drain the water and grind or blend the spinach in a blender.
  • Heat 2 Tbsp of oil in a kadai. Place the paanch phoren or cumin seed in the oil and let it crackle. Add the green chillies, garlic and onion .Saute until onion turns transparent . 
  • Add the sliced potato , season with salt. Fry and cook until potatoes are done. Add the tomatoes and cook for 3 minutes.
  • Once potatoes and tomatoes are done add the spinach logs or blended spinach puree.
  • Season with pepper and let it cook for 10 minutes in low heat .
  • Finally check for salt and adjust the salt.
  • Turn off the heat and serve hot.
Serve hot with rice , chapati, bread or nan. Enjoy!

  1. I shall use fresh spinach leaves. These are available anywhere and I pay a fraction for it, like RM1.00 for a fresh bunch. The potatoes inside is what we will not want to miss on for the awesome thick textured dish.
