Momos(Veg)

Hi in this post we will learn how to prepare Momos(veg). This basically a Tibetan Dish.

Ingredients:
For the filling

  • Cabbage- 1/2 cup finely chopped
  • Tofu or paneer- 1/2 cup finely grated
  • Carrot - 1/2 cup finely grated
  • Garlic paste - 1Tsp
  • Ginger Paste - 1/2 Tsp
  • Chilly powder- 1/2 tea spoon
  • Pepper -1/2 tea spoon
  • Oil for frying
  • Salt- as per taste 


For the cover

  • Maida or All purpose flour - 1/cup
  • Water - to prepare the dough



PREPARATION:

For the filling:
Heat oil in pan add all vegeatbles and other ingredients .
Fry until all the vegetables get cooked well.


For the cover :
make  dough out of maida
make small balls and roll them flat in either squrae or round shape.(shape can be compromised ;-))
make sure you roll them flat really thin.
Now carefully take the flattened maida on your palm put the fried vegetable in the middle and close it from all side such that you create a seal.

Steaming:
Take steamer and steam this sealed momo for next 3 min.

serve it hot with sauce or tomato chutney

Coconut Ladoo (Nariyal K Ladoo)

Coconut ladoo ,one was never enough for me. People in my area are too good in the preparation of this sweet dish. Sweetness and the taste of coconut that melts in your mouth with each bite, its a mouth watering dish. One of my Bengoli neighbor always made it awesome. I know many of you like me like this sweet , you can sometimes try it out by yourself. Here is the recipe:

Ingredients:
Coconut(grated) - 2 cups
Milk - 2 cups
Sugar - 1cup
Cardamom - 3 pieces (seeds only)
Saffron - Pinch of
Pistachios - 3 to 4 crushed

Method:


  • Heat one pan and add the crushed coconut to the pan
  • Fry it for while
  • Now add the milk to the grated coconut
  • Keep on stirring in low flame
  • Now add the sugar to it
  • Keep on stirring unless the mixture becomes thick enough so that you can bind it into small balls.
  • Once the mixture becomes dry and milk seems to disappear turn off the heat
  • Allow this to cool for next 5 to 10 min
  • Now add the cardamom
  • Now make out small balls with the help of your palms
  • Garnish each with saffron and pistachios

Your dish is ready to be Served

Gulab Jamun

Hii, in this post we will learn how to make gulab jamun. This is a sweet dish and people in india love it like anything.

Ingredients:

  • Milk powder- 100 gm
  • Backing soda - (pinch of )  
  • Paneer  (fresh paneer preferably made up of cow milk ) - 125 gms
  • All purpose floor (maida) - 2 1/2 tsp
  • Cardamom 
Sugar syrup:
  • Two cups of sugar
  • Two cups of water

  • oil for frying
Method:
  • Take all the ingredients in one bowl and mix them well such that the dough is neither too tight nor too soft.Leave the dough for 15mins. 
  • Now make balls out of this dough.
  • Deep fry them until they turn golden in colour maintain medium to low heat.
  • Now make sugar syrup by adding sugar to boiling water. Add the crushed cardmom seeds into the syrup. once the mixture thickens add the balls into the syrup. 
  • Your gulab jamun is ready to serve.

Pizza

Hii , in this post we will learn how to make some amazing PIZZA's, This will serve one.

Ingredients:
1. Pizza Base - 1 medium in size
2. For the Sauce

  • Tomato- 1 large size
  • Garlic paste - 1/2 tsp
  • Green chilli paste - 1/2 tsp
  • Olive oil for make sauce
  • Salt for taste
3. Toppings
  • Tomatos - 1 small finally sliced
  • Onion - 1 small finally sliced
  • Capsicum- 1 small finally sliced
  • Mozerella Cheese- 250gms finally grated
  • Salt for taste
Method:  Making sauce
  • Blanch the tomatoes( Make slight cuts on all sides of the tomato, and put it under boiling water for 2 minutes. peel off the skin)
  • once blanching is over grind the tomato in the grinder to get a puree out of it
  • Now take olive oil in a pan add garlic and chilli paste fry it out and finally add the tomato puree.
  • cook for sometime unless you get a thick paste .
  Setting the oven:
  • preheat the oven at 180 degrees
  • Greese the baking tray with olive oil
  • now take the pizza base in the tray and turn on the heat of ur gas stove slightly heat the tray for 30 seconds fliiping the base on both sides
  • once u r done with that now spread the sauce over the base
  • Sprinkle half of the mozerella cheese over the sauce
  • Now spread all the toppings 
  • Now sprinkle rest of the cheese over the toppings.
  • Spread lots of olive oil over the tray also on the sides of the Pizza base
Once u r done with spreading put the tray in preheated oven. Bake the pizza  for next 10 min at 180 degrees.
U will see the cheese melting and the topping getting a good sizzling with it.

after 10 min take out the pizza transfer it to serving tray. U can add chili flakes and oregano over the hot pizza and what next Cut it and Enjoy......

Apple Halwa

Hii,
in this post we will learn how to make apple halwa. Its a sweet dish and can be served as desert.

Ingredients:
Apple - 2 medium size
Milk - 3 cups
Sugar - 3 tsp
Dry fruits - 1/2 cup

Methods:

  • grate the apple.
  • Boil the milk
  • In the boiling milk add the grated apple.
  • keep on stirring the mixture unless the milk thickens
  • once the milk thickens and apple gets cooked add the sugar
  • Now add all the dry fruits
  • Turn off the heat
  • Allow it to cool Or u can also serve it Hot. Choice is Yours.

Baigini (Brinjal dumplings)

Hi, in this post we will learn how to make baigini. This is a deep fried dish usually served as snacks. In north eastern india People love eating this recipie usually when it rains.......
This recipie will serve four.....

Ingredients:

Brinjal- 2 medium in size
Gram flour(Besan) - 250 gms
Salt - As per taste
Red chilli powder - 1 tea spoon
Turmeric Powder- 1/2 tea spoon
Pepper powder - 1/2 tea spoon
Oil - for frying
Tomato ketchup
Water - 1 cup

Method:
  • Slice the brinjal into thick pieces somewhat little less than the thickness of regular bread.
  • Now make thick paste out of gram flour , salt and all masala.
  • Heat the oil in a deep frying pan
  • once the oil gets heated coat each slices of the brinjal with the gram flour paste 
  • Deep fry the coated brinjals.
  • Serve it hot with Tomato ketchup or green chutney
Your Baigini or brinjal dumplings are ready to serve.......................

chicken Kabab

Hii , in this post u will learn how to make chicken kabab.

Ingredients:

  • Chicken - leg pieces(4)
  • Salt- as per taste
  • Oil - 3 tsp
  • Turmeric - 1tsp
  • Ginger garlic paste - 2 tsp
  • Red chilli powder - 1/2 tsp


Method :

  • Make a paste out of salt , turmeric , red chilli powder and Ginger garlic paste
  • Apply this marinate on this chicken leg pieces
  • Now allow it to marinate for next 1 hour
  • Preheat the oven for 10 min at 120Degree 
  • Now apply oil over the tray and put the chicken and heat it at 120 Degree  for next 30 min.
  • Keep on turning from time to time so that both sides are evenly cooked also keep on brushing the chicken with some oil each time chicken is turned.
  • Next take a grill and  put the chicken on it. Allow it to get crispy on all sides. Brush it with oil and keep on turning.
  • Also we can grill it by placing a grill tray over the gas stove and turning the chicken from time to time. 


Your chicken kabab is now ready to serve. Serve it with Green chutneys and sliced onion.

Stuffed Ladyfinger or Bhindi Masala

Ladyfinger lover will always love this Dish. I first got to know this recipie when my mummy bought a microwave and in its booklet they had mentioned about how to cook this masala bhindi in microwave. Immediately i tried and i came out with colourful and bright result. Post marriage i wanted to cook it but then on gas , This is what i tried and to my luck i was able to make my hubby too happy with it. :-)
It can be served with chapati or with Rice.
This recipie will serve four.


Ingredients:
  • Lady finger/Bhindi/Okra - 400gms
  • Mustard oil- 3 Tsp
Ingredients for Masala:
  • Turmeric Powder- 1 Tsp
  • Coriander Powder- 1 Tsp
  • Pepper Powder- 1 Tsp
  • Aam chur (Dried Mango Powder)- 1 Tsp
  • cinnamom Powder - 1/2 Tsp
  • Tomato - finely chopped 1(medium in size)
  • Salt- as per taste
  • Onion- 1 finely chopped (medium in size)
  • Oil - for frying
  • Green chillies - 2 pcs
Method for preparing Masala:
  • Take oil in one pan
  • Add the cinammom powder
  • Add the chopped the chillies
  • Add the finely sliced onion
  • Fry for sometime.
  • Now make a thick paste of the remaining ingredients by adding some water to it
  • Fry out this paste along with onion.
  • Fry out until u can sense all the flavours of masala
Method for stuffing and cooking Bhindi:
  • Slit the bhindi as shown in the picture
  • Stuff the masala inside the slits
  • Heat 2 Tsp of oil in a flat kadai
  • Now slowly put all the stuffed bhindi into oil
  • Sprinkle some salt over the bhindi
  • Sprinkle little water
  • Cover the kadai and allow the bhindi to be cooked for 5 min.
  • Keep turning the bhindi from time to time such that the whole bhindi is evenly cooked

Your stuffed lady finger is now ready to serve

Chilli Potato

Hii , in this post u will learn how to make Chilli Potato.
This is very quick and easy recipie. Am sure its gonna give a good taste to indian palets as well as people who like having spicy food..... It can be taken as snacks or can be served with Main course items.

This recipie will serve four...

Ingredients:
  • Boiled potatoes / Baked potatoes (skin peeled off)- Small sizes 300gms
  • Oil - 2 Tsp
  • Dry Red Chilli - 3 to 4 pcs
  • Cumin Seeds- 1/2 Tsp
  • Garlic - 2 Tsp (finely chopped)
  • Ginger - 1 Tsp(Grated)
  • Onion - sliced into quarters (small in size)
  • Pepper - 1/2 Tsp
  • Green chilli paste - 1 Tsp
  • Salt - as per taste
  • soya sauce - 1 Tsp
  • lemon juice - 1 Tsp
  • Tomato ketchup - 1 Tsp
  • Fresh coriander leaves - chopped (For Garnishing)
Method:
  • Once you have the boiled poatoes u can start by heating oil in a pan.
  • Add dry red chillies to the oil.
  • Add Cumin Seeds. Once it starts crackling  add finelly chopped garlic.
  • fry it for sometime and then add ginger.
  • Fry the ginger for sometime.
  • Now add the onion , salt and pepper powder.
  • fry until the onion turns half tender.
  • To this add Soya sauce , lemon juice and tomato ketchup.
  • Add little water and fry for sometime.
  • Finally add the boiled/baked small potatoes.
  • Fry it for sometime.
Garnishing:
Serve the Chilli potatoes in a plate and garnish it with some finelly chopped fresh coriander leaves.

Chicken Curry(Muri Style)

Hi, in this post u will learn how to make a quick and yummy chicken curry. This style of cooking chicken is quite common in north eastern part of India i.e. Jharkhand and Bihar and therefore we can also name it as "Bihari Murga jhor" ;-)

Preparation time 15 mins
cooking time 30-40 mins
This recipe will serve Four.....

Ingredients:
  • Chicken (bone or boneless)- 1kg
  • Onion - 350 Gms (finely chopped)
  • Ginger & Garlic paste - 3 tsp
  • Mustard Oil - Take enough so that ur chicken is cooked perfectly
  • Cinnamon- 5 pcs
  • Cloves - 3 or 4 pcs
  • Bay leaves- 2 pcs
  • Cardmmom - 2 pcs
  • Salt - As per taste
  • Turmeric -3 tsp
  • Chicken masala powder - 2 Tsp
  • Coriander Powder- 2 Tbsp
  • Cumin powder - 1 Tbsp
  • pepper powder - 1 Tsp
  • Garam masala powder- 1/2 Tsp
  • Green chillies - 5 pcs
  • Dry red chillies - 3 pcs
  • yoghurt or dahi - 3Tbsp
  • Ghee - 2 Tbsp
  • Corainder leaves - Shred them
 Marinate:
To prepare the marinate clean and thoroughly wash out the Raw chicken pcs.
  • Once cleaning is done add 3 tsp of turmeric powder
  • Add 3 tsp of Salt
  • Add 1 tsp of mustard oil
  • Add 1 tsp of Yoghurt
  • Allow the marinate to stand for 1/2 hr
Gravy:
  • Take one kadai and heat it
  • Add 5 tsp of oil and heat it
  • once the oil gets heated add chopped green chillies and onion
  • fry it until onion turns golden brown
  • Take another pan add 2 tsp of ghee heat it. To this add Cinnamon ,Cloves , Bay leaves and Cardmmom once the aroma starts heating your senses pour this mixture to the kadai in which u are frying your onion .
  • Now add the marinated chicken to the kadai, fry it for 2-3 mins
  • Next add the ginger garlic paste , fry it for 5 mins
  • Now take one bowl. To this add all the masala's,red chillies,remaining yoghurt and make a semi thick paste out of it
  • Add this masla paste to the chicken and fry out atleast for next 10 mins
  • once all the flavours of masala starts heating your senses finally add 2 cups of water to this.
  • Allow the curry to simmer for next 5 -10 mins..
  • When the curry thickens at this point  turn off the heat and add finally chopped coriander leaves.
Hey your chicken is ready to serve. It can be served with Freshly made chapatis or freshly cooked Rice....

Spinach Soup Recipie(Palak ka Soup)

Hi, in this post u will learn how to prepare spinach soup. 
Spinach, along with other green leafy vegetables is considered to be a rich source of iron
Spinach is very nutritious and highly rich in Vitamin A ,Vitamin E, Vitamin K, Folic Acid.......and many more elements. It is very much liked by small babies aged 8 months to 1 year. Also its a perfect appetizer.


Cooking time -15 mins
This recipe will serve Four.



Ingredients:
  • Spinach - 250Gms 
  • Onion -1 medium in size (quaterly chopped)
  • Garlic - 4 to 5 pcs
  • Salt - as per taste
  • Corn Flour - 1 tsp
  • Clarified Butter(Ghee) - 1tsp
  • Pepper - 1/2 tsp
  • Green Chillies - 2 Pcs(optional)
Method:

  • Wash the spinach thoroughly.
  • Heat 2 cups of water in a Bowl.
  •  Add the rinsed spinach in the boiling water . To this add chopped onion , garlic , green chillies and salt.
  • Allow the mixture to boil for atleat 10 to 15 min such that spinach and onion turns tender.
  • Now turn off the heat and allow the mixture to come to normal temperature.
  • Now grind this mixture to fine semi-liquid paste.
once we have the mixture we will add some flavours to the mixture
  • Heat one pan
  • Add 1 tsp of ghee or clarified butter to the heated pan
  • Once the ghee gets heated add the corn flour and fry it for 1 min in low heat
  • Add pepper to this
  • Now finally add the grinded spinach mixture to this and allow it to heat under low flame for next 2-3 min
Garnish it with some fresh cream and bread at the top.Your spinach soup is now ready to serve. 
Serve it Hot with some nice Dry Breads........................

Radish Chapati(Muli ke parothe)

Radish, many of us dislike it either because of its taste or for the smell. For me to dislike radish these two criteria are just enough. My mother always used to put it in Dal or sometimes put it in some curry and i would just go mad because i hated it like anything. But then there is something appealing in their appearance that made me to consume it . It was the parotha that i once tasted in my neighborhood. But the steaming of grated radish annoyed me as its smell was killing so i decided to find a way where i can get rid of both the smell and that typical taste. Here is the tasty ,filling Radish Parotha Recipie.

Ingredients:
Radish- 5pcs(Medium in size)
Coriander(Parsley) - Finally chopped
Onion -1 pcs(large in size) finally chopped
Green chillies- 2 -3 finally chopped
Garlic -7pc finally chopped
salt- As per taste
azwain(carom seeds)- 1 Tsp.
Oil - To fry
Flour - 3 cup
Water - 1cup

To make the radish filling:

  • peel of the radish and grate it. 
  • Put the radish in one bowl and Add salt to it.
  • cover the bowl with a plate and allow the water to come out. wait for 5 minutes.
  • squeeze the water out of radish.
  • once the whole water has been drained add the finally chopped onion, garlic, chillies ,azwain.
  • Mix the above ingredients well.


To make the chapati

  • Take flour in one bowl .
  • Add pinch of salt , 2tsp oil and water.
  • knead the flour into fine dough..
  • Make small balls out of the dough. Roll it flat to half the size. add the radish feeling (remeber to squeeze out the water). close the chapati into small ball and finally roll it flat.
  • Once rolling is done, heat the Tawa and put the flattend chapati on it. Allow it to cook on both the sides.
  • Add 1 tsp oil to the pan and allow the chapati to be cooked evenly on both the sides
  • Once both the sides turn slightly golden brown in colour. take it out of the pan .


Serve hot with Potato curry or any other curry... Enjoy!!!!!!!!!!!!!
